Miso Soup with Tofu

The simplest, most restorative bowl you can make. Raga Plain Tofu in a clean dashi broth with white miso, wakame, and spring onions. Ready in five minutes.

  • 150gRaga Plain Tofu, cubed
  • 600mldashi stock (or vegetable stock)
  • 3 tbspwhite miso paste
  • 1 tbspdried wakame seaweed
  • 2spring onions, thinly sliced

How to make it

Method

Rehydrate wakame

Soak dried wakame in cold water for 5 minutes. Drain and set aside.

Heat the stock

Bring dashi stock to a gentle simmer in a saucepan. Do not boil.

Dissolve the miso

Ladle a little hot stock into a small bowl, whisk in the miso paste until smooth, then pour back into the pan.

Add tofu and wakame

Add the Plain Tofu cubes and wakame. Warm through for 1–2 minutes. Do not boil after adding miso.

Serve

Ladle into bowls and top with spring onions. Serve immediately.

Chef's Tips

  • Never boil miso — it destroys the beneficial probiotics and dulls the flavour.

  • Use white (shiro) miso for a milder, sweeter broth; red miso for something deeper.

  • Add a soft-boiled egg or a drizzle of sesame oil to make it more substantial.
