How to make it
Soak dried wakame in cold water for 5 minutes. Drain and set aside.
Bring dashi stock to a gentle simmer in a saucepan. Do not boil.
Ladle a little hot stock into a small bowl, whisk in the miso paste until smooth, then pour back into the pan.
Add the Plain Tofu cubes and wakame. Warm through for 1–2 minutes. Do not boil after adding miso.
Ladle into bowls and top with spring onions. Serve immediately.
Chef's Tips
Never boil miso — it destroys the beneficial probiotics and dulls the flavour.
Use white (shiro) miso for a milder, sweeter broth; red miso for something deeper.
Add a soft-boiled egg or a drizzle of sesame oil to make it more substantial.
