Silken Tofu Panna Cotta

  • 300gRaga Plain Tofu
  • 200mlcoconut milk
  • 3 tbspmaple syrup
  • 1 tspvanilla extract
  • 1 tspagar agar powder
  • 2ripe mangoes, peeled and diced
  • 1 tbsplime juice
  • 1 tbspsugar

How to make it

Method

Blend the base

Blend Plain Tofu, coconut milk, maple syrup, and vanilla until completely smooth. Taste and adjust sweetness.

Set with agar

Pour into a small saucepan, whisk in agar agar powder, and bring to a gentle simmer over medium heat. Stir for 2 minutes.

Pour and chill

Pour into 4 lightly oiled ramekins or glasses. Allow to cool to room temperature, then refrigerate for at least 2 hours.

Make the coulis

Blend mango, lime juice, and sugar until smooth. Pass through a sieve for a silky finish.

Serve

Run a knife around the edge of each ramekin and turn out onto a plate, or serve in the glass. Spoon over the mango coulis.

Chef's Tips

  • Chill overnight for the firmest, cleanest set.

  • Swap mango for passion fruit or berry coulis depending on the season.

  • A pinch of cardamom in the base adds a beautiful floral note.
