How to make it
Blend Plain Tofu, coconut milk, maple syrup, and vanilla until completely smooth. Taste and adjust sweetness.
Pour into a small saucepan, whisk in agar agar powder, and bring to a gentle simmer over medium heat. Stir for 2 minutes.
Pour into 4 lightly oiled ramekins or glasses. Allow to cool to room temperature, then refrigerate for at least 2 hours.
Blend mango, lime juice, and sugar until smooth. Pass through a sieve for a silky finish.
Run a knife around the edge of each ramekin and turn out onto a plate, or serve in the glass. Spoon over the mango coulis.
Chef's Tips
Chill overnight for the firmest, cleanest set.
Swap mango for passion fruit or berry coulis depending on the season.
A pinch of cardamom in the base adds a beautiful floral note.
